Somaho unfolds its potential especially as an espresso, where the fruity sweetness and clear flavours stand out wonderfully. It can also be enjoyed as a café crème or filter coffee, but its full profile is revealed in concentrated form in an espresso cup. The careful washing process gives it its clarity and fine structure. Behind Somaho are the smallholder families of the People's Farm in the Mahembe region, situated at an altitude of 1,700 to 1,800 metres. Around 400 families are involved here, many of them women who help to organise exports and trade. Kivubelt Coffee works closely with these producers and has already won the Cup of Excellence with Somaho. In addition to coffee, the families cultivate small fields of beans, bananas, vegetables and sweet potatoes, which they use for their own food supply. The Red Bourbon variety and the high altitude on Lake Kivu give this coffee its complexity and purity. Somaho carries the Direct Trade label, guaranteeing fair conditions and direct cooperation with the producers. With Screen 15 and the 2024 harvest, it stands for freshness and top quality. Ojo de Café Costa Rica Espresso, 250 g Bohnen

Der Costa Rica Espresso von Ojo de Café ist ausgewogen, elegant und gleichzeitig voller Charakter – perfekt für alle, die Genuss mit Haltung schätzen. In der Tasse zeigt sich dieser Medium-Dark Roast mit warmen, einladenden Noten von Lebkuchen, Rohrzucker und Brombeere. Der Körper ist voll, die Textur seidig und rund. Its nutty profile is reminiscent of a delicate dessert and delights with a creamy finish. The body is pleasantly present, the acidity is finely integrated and the sweetness is reminiscent of dark cocoa. A coffee that accompanies you with warmth and harmony from the very first sip. As an omni roast, Samba Mama is suitable for both espresso and filter. Espresso: 17-19 g coffee, fine grind, 41 g water at 90 °C, extracted in 23-29 seconds. Filter: 17-19 g coffee, medium grind, 220 ml water at 90 °C, with a brewing time of 1:50 minutes. This allows its notes of cocoa, vanilla and macadamia nut to unfold in full clarity - creamy as an espresso or round and smooth in the filter. Samba Mama comes from Alto Jequitibá, Caparao, Minas Gerais and is grown by small farmers at 800-1,000 metres above sea level. The Catuaí variety is sun-dried (natural), which gives the coffee its fine balance and aromatic depth. Behind the kafisack brand is the Kessler roastery from Siebnen (SZ), which has stood for honest craftsmanship, sustainability and pure flavour since 2019. Demeter coffee versus organic coffee: what's behind it?

Organic coffee and Demeter coffee - two terms that often appear in connection with sustainable coffee enjoyment. But what is the difference? This much can be revealed: Demeter certification includes far stricter guidelines - from compliance with biodynamic production guidelines to a wide range of sustainability aspects.

Why is sustainability so important in coffee production in particular?

Sustainability is the key to ethical, environmentally friendly and future-proof coffee production. But that's not all: sustainable farming methods often lead to higher quality coffee beans with unique flavors, which benefits both producers and consumers. Sustainable practices reduce the use of chemicals, protect soils, preserve biodiversity and protect the climate.

How does organic coffee differ from conventional coffee?

Organic coffee is more than just a drink. It is a statement for environmental awareness, fair trade and pure enjoyment. In contrast to monoculture in conventional cultivation, organic farmers rely on mixed cultivation, which means that coffee plants are allowed to grow together with other plant species. Why is that? This promotes biodiversity and makes the plants more resistant to disease.

Monocultures, on the other hand, harbor serious ecological and economic risks. Focusing on the cultivation of a single plant species over large areas leads to greater susceptibility to diseases and pests and to rapid soil depletion

Coffee plants are very sensitive. Too much heat, but also too much cold, damages them. Moisture is good, but not too much. Coffee farmers like to plant avocado, grapefruit or banana trees, coconut palms or eucalyptus plants next to coffee plants. These mixed cultures ensure that coffee plants are protected from too much sunlight and heavy rainfall.

Organically grown - sustainably enjoyed Conventional coffee cultivation often relies on chemical fertilizers, which provide short-term growth but deplete the soil in the long term. Organic coffee farmers, on the other hand, rely on compost and organic fertilizers. The result? Fertile soils where coffee plants feel right at home.

Fair trade, fair wages Organic coffee stands for fairness not only towards nature, but also towards the coffee farmers. Fair trade practices guarantee fair wages, so that every sip of coffee also bears some social responsibility. Incidentally, unlike conventional coffee, organic farmers harvest their coffee cherries by hand. Industrial harvesting methods are not used.
