This creamy coffee reveals clear nuances of nougat and milk chocolate. In combination with milk, it is almost reminiscent of hot chocolate. The successful balance of this coffee is complemented by fruity notes, such as wild berries or stone fruits, and gives it a pronounced sweetness.T'xayalaj is the name of the farm that was purchased around fourteen years ago by Maria Perez Morales and her husband Diego to grow coffee there. Maria is mainly responsible for running the farm and receives support from her family, while her husband Diego works abroad. Interestingly, Maria's children have also developed a growing interest in growing coffee and caring for the land. They can well imagine taking over the farm when the time comes.Over the years, Maria has learnt a lot about coffee farming and gained valuable experience. Her hard work has enabled her to produce high-quality speciality coffees for the third time. Although her farm is comparatively small - this year we purchased about half of the total harvest of 345kg - Maria's dedication and expertise shows how much potential there is in this small but impressive farm.

At first sip, this coffee surprises with a strong, intense flavour and an exciting note. On the second sip, flavours of cherry and red berries emerge, accompanied by a full body. The coffee is exceptionally sweet and impresses with tropical fruit flavours such as passion fruit, pineapple and mango. Despite its fruity intensity, it remains balanced, clear and somewhat reminiscent of a multi-fruit juice - but with a much more complex flavour structure. An impressive example of how versatile coffee can taste. This coffee is strongly reminiscent of the El Diviso 180 from 2022, with both coffees sharing similar fermentation methods and tropical fruit flavours. However, the Ombligon is more elegant, clearer and more complex. During the harvest, only very ripe coffee cherries are picked, which is checked by measuring the sugar content with a Brix meter. The cherries are first placed in open plastic containers for 48 hours, where they oxidise. The sugar and pH values are checked regularly. The cherries are then placed in cold water to remove any unripe, damaged or light beans floating on the surface.
