The journey to the perfect roast profile begins quietly and with intense focus. When the green beans arrive at the Oederlin site, the first steps involve observation, testing and scrutiny. Initial profiles are developed on the sample roaster, tailored to the physical characteristics of each individual bean. Moisture content, density and sugar structure determine how heat affects the beans and how the flavours unfold. Nothing is left to chance; everything is carefully controlled.
Before a coffee moves on to the next stage, it is assessed in a cupping session. This is where its true character is revealed. Acidity, sweetness, body and aftertaste are not merely rated, but understood. Only when the balance and expression are just right does it proceed to the main roaster. The Giesen W15A allows these profiles to be reproduced with the utmost precision. In small batches. On demand. Always fresh. Always with respect for the raw product.
