Café Noir's coffees range from classic dark roasts to fruity interpretations that open up unexpected flavours.
Sometimes a great story begins very small - in an old student dormitory in Zurich's Kreis fünf district. Where the aroma of freshly roasted beans has been wafting through the rooms since 2006, something was born that has changed Zurich's coffee culture forever.
Café Noir is not a place that has to be loud. It is a place where you can feel how passion, craftsmanship and conviction create a coffee that touches far beyond the flavour.
Café Noir is more than just a roastery - it is a commitment to genuine enjoyment. With their passion project, Mischa Gubler and Pascal Stübi recognised early on that coffee can be more than just an everyday drink. They are among the pioneers who laid the foundations for a new, conscious coffee culture in Zurich.
Instead of uniformity, they chose character. Instead of mass: class. Each coffee bears the signature of a team that prioritises quality, authenticity and craftsmanship above all else. Here, varieties are created that tell stories - of origin, of dedication, of genuine enthusiasm.
Roasting is done with time, patience and a fine sense for the essentials. Today, the heart of the roastery is located in the listed building on Hohlstrasse: a Probat UG22 from 1960 - restored, cared for and loved.
Each batch is filled with a maximum of 25 kilograms and gently refined for around 20 minutes. This allows flavours ranging from dark chocolate to fruity surprises to unfold. The master roaster continues this legacy with a steady hand and a fine ear - 500 kilograms per week, each bag carefully selected, each bean treated with respect.
Café Noir follows its path with conviction, not with big words. For them, organic is not a trend, but an attitude - because healthy soil, fair conditions and honest labour are the basis for good coffee. Direct trade would be the ideal, but reality demands reliability and consistency in quality.
This is why Café Noir seeks the best balance between ideals and feasibility - always with an eye on what really counts: fair treatment of people and nature. Labels are not celebrated here, but scrutinised. Because honesty begins where marketing ends.
