This special Castillo coffee comes from the green heights of Quindío and expresses the full spectrum of Colombian diversity - from juicy fruits to subtle herbal flavours. A coffee that is not loud but elegant - fresh, balanced and unmistakably lively.

La Divisa seduces with a bouquet reminiscent of a summer's day: dark, ripe cherries open the aroma, accompanied by a syrupy sweetness reminiscent of blackcurrant compote. On the finish, subtle notes of green tea and dark chocolate unfold, giving the coffee depth and balance. Its bright, juicy acidity provides freshness, while the velvety mouthfeel makes every cup a harmonious pleasure.

This coffee unfolds its full aromatic complexity particularly well in filter preparation. Whether as a pour-over, in the Chemex or in a classic hand filter - slow brewing allows the fruity and floral nuances to come to the fore. Use filtered water at a temperature of around 93°C and a medium grind to bring out the perfect balance between sweetness, acidity and body.

La Divisa comes from the farm of the same name owned by Diofanor Ruiz, a passionate coffee farmer from Buenavista, Quindío. His Castillo beans grow at an altitude of 1950 metres in a unique microclimate characterised by volcanic soil, cool temperatures and plenty of rain. The coffee is processed naturally - a process that emphasises the fruity notes and gives it its intense sweetness.

Diofanor lives on the farm with his family, where tradition and modern farming methods go hand in hand.
