Mokaflor Chiaroscuro
These coffees are roasted separately, slowly and gently in a rotary drum and only then blended. This gives each variety its own optimal roasting process. This blend is perfected by the slow and individual roasting of each variety in the rotary drum for between 15 and 18 minutes. The result is a mild, low-acid and low-caffeine coffee that is just as suitable for espresso machines as it is for fully automatic machines. Velvety and soft, Chiaroscuro envelops the taste buds - and only lets go long after the last sip.
The Mokaflor coffee roastery has been operating in the heart of Florence since the 1950s and has been run by the Bernini family for several generations. This fine tradition allows continuity in the roasting craft and the passing on of coffee knowledge over generations.
Mokaflor roasts with a drum roasting machine, in which the coffee is heated slowly and gradually, which allows its flavour to develop best. After blending the coffee beans, the coffee is placed in degassing silos, where it rests for around 10 days to degas. Before packaging, the blends are tested using a professional espresso machine.
