Colombia Zarza is elegant, floral and fruity and funky at the same time. You can expect an aroma of jasmine, accompanied by clear citrus notes, ripe berries and stone fruit. In the cup, it unfolds a refreshing balance of mandarin and apricot - a combination that reminds you of sunny days. Despite its intense flavours, it remains wonderfully clean and balanced.

This coffee has been prepared so that you can enjoy it both as a filter and as an espresso. For filter coffee, Drip Roasters recommend preparation with the Origami Dripper: 15 g of coffee to 250 g of water at 93 °C, in five infusions over 2:30-2:45 minutes. As an espresso, it unfolds best with a brew ratio of 1:2.3 - 20 g coffee in / 46 g espresso out, with around 27 seconds of extraction. Whether pure as an espresso or as a fruity pour over - the Zarza shines in every variation.

The Zarza comes from the farm of the same name in Bruselas, Pitalito, where Alejandra Muñoz Ortiz and her husband Jhonatan Gasca grow pink bourbon on six hectares. The beans undergo a multi-stage, elaborate processing with oxidation, anaerobic fermentation, thermal shock and gentle drying - all for a clear, intense flavour profile. With an FOB price of $7.03/lb, the payment for this coffee is 352% of the Fairtrade minimum price - a sign of transparency and appreciation.
