The history of El Conejo is deeply rooted in tradition and innovation. A lot has happened since Elías Samuel Zelaya Siembra became the first organic coffee producer in Marcala in 1990. The pioneers of organic coffee in Honduras founded an association for biodynamic farming in 2012, inspired by the Mayan calendar and the reign of the mighty Mayan king Uaxaclajuun. This historical and cultural background flows into every sip of El Conejo, making it a coffee with soul and history.

We recommend that espresso roasts be used 12 days after the roast date or filter coffees 5 days after the roast date found on the package. Freshly roasted coffee needs this time until it is ready for a constant extraction.
