Sencha is a green tea with a distinctive, fresh flavour and very uniform, emerald-coloured leaves. Typical of Japanese green teas is that they are pre-dried with hot air and then usually briefly treated with hot steam to interrupt the fermentation process.
Over three quarters of the tea grown in Japanese tea gardens is Sencha. Most regions produce different types, which are named after the way they are processed. There are various cultivation methods for green tea in Japan. Sencha comes from open fields (so-called "red en") that are exposed to full sunlight. This distinguishes it from other varieties, such as Gyokuro, which grow in reduced sunlight (on so-called "oiishita en").
This sencha is purchased from the first harvest in the south of Japan (Kagoshima Prefecture). It is known for its high vitamin content and sweet, round flavour. This traditional green tea from Japan is cultivated organically and is very popular in its homeland thanks to its round, tangy flavour.
