The Isule Dark Night is a dark roasted coffee. Strong, low in acidity and with a hint of dark chocolate. At higher temperatures in the roasting drum, the sugar in the beans begins to caramelise. While the acids are reduced, the roasted aromas and bitter substances come more to the fore. "The darker the night, the brighter the stars shine." In Africa, and especially in Uganda, the nights are jet black. ISULE's latest creation is also inspired by this.Isule is located in western Uganda at the foot of the Rwenzori Mountains on the border with the Democratic Republic of Congo. A small cooperative in the community of Isule in western Uganda produces an excellent, single-origin Arabica coffee.The Rwenzori Massif is a UNESCO World Heritage Site because of its high ecological importance. Even the Greek geographer Ptolemy reported on the legendary "Mountains of the Moon", where the Nile is said to have originated. Trees covered in dense lichen and primordial plants line the path to one of the most beautiful natural paradises in Central Africa. Despite its close proximity to the equator, the climate is pleasantly mild and the soil rich in nutrients. These ideal conditions favour the cultivation of high-quality Arabica coffee.The plantation is located at over 1'600m above sea level. On the steep slopes, the ripe coffee cherries are carefully picked by hand. Coffee is the only source of income for the community of Isule. Every additional franc the farmers receive per kilogram secures the income for the families and thus also the expensive school fees for the numerous children.In Western Uganda, coffee is often sold to middlemen below cost price and mixed with other low-quality varieties. In this way, coffees of varying quality find their way into the world market. Val&tin's garden believe that direct trade offers a real opportunity to bring producers and consumers directly together. That is why they have launched the Isulecoffee project. With this project, they enable farmers to connect directly to the market and thus sustainably improve working and living conditions in Isule.

The ripe cherries are picked by hand and dried in the sun, only then is their pulp removed. The sweet pectin layer, the so-called mucilage, which coats each coffee bean, can thus act on the bean for a long time and develop a pronounced sweetness. This coffee is perfect as a cappuccino. 80% Arabica. Kräftig und aufregend Diese Kaffeemischung setzt sich zusammen aus Kaffeebohnen aus den Hochebenen von Mexiko, Kolumbien, Brasilien und von der Elfenbeinküste. Dieser echte Espresso ist stark und kräftig und wurde nach einem alten italienischen Rezept geröstet. Im Gegensatz zur Mocca-Mischung aus dem gleichen Hause haben wir es beim La Semeuse Don Marco nicht mit einer reinen Arabicamischung zu tun. Der Kaffee setzt sich zusammen aus 80%Arabica-Bohnen aus den Hochebenen Mexicos und Kolumbiens und aus Brasilien und etwa 20% Robustabohnen von der Elfenbeinküste. Die Zugabe von Robustabohnen sorgt dafür, dass sich eine deutlich kräftigere Crema in der Tasse bildet. Der Zucker sinkt nur langsam durch die Crema hindurch, so wie es bei einem reinrassigen Espresso auch erwünscht ist.Die Aromen sind intensiv und verführerisch. Sie werden edle holzige und köstliche Lebkuchenaromen erkennen. Auch geschmacklich hat der Don Marco einiges zu bieten. Three forces - Tre Force.Roasting on an olive wood fire At the foot of the volcano Etna in Sicily, a forgotten secret of Italian espresso culture was slumbering: more than 120 years ago, people there were already roasting their Caffè over an open olive wood fire. The slopes of Mount Etna in particular are rich in olive groves, which grow particularly well on the fertile lava soil. The lava soil enriches the wood with minerals that release spicy aromas when flamed. Tre Force has revived this gentle, manual roasting process. In an optimised form, this traditional method is used specifically for roasting Tre Force Caffè. As was the case many generations ago, the cut wood from the olive groves is used for this purpose and no tree is felled.The perfect blendQuality and care Tre Force uses only select premium beans from the best highland locations in the world. The blend is secret. A smaller proportion of high-quality robust beans refines first-class Arabica beans. In contrast to the standard, the raw beans are filtered and sieved not twice but five times and then roasted by hand with calm and care in small batches at low temperature for 20 to 30 minutes. Each type of bean gets exactly the roasting time it needs. And only then are they blended. The typical Italian coffee blend for the ristretto lover, environmentally friendly packed in a resealable aluminium-free bag. It must be Monday or Thursday. Coffee is roasted at Ferrari on these days. And this has been going on since 1895.Renato Ferrari, 76, owner of Switzerland's oldest and last coffee roastery that still uses coal for heating, stands next to the glowing oven to check the roasting degree of the beans. For half an hour, he repeatedly pulls off handfuls of beans with the sample extractor and places them in the cooling sieve: "It's purely a matter of eye, based on experience.
