It comes from several municipalities in the Frailesca region in the south of Chiapas, not far from the Reserva de la Biosfera El Triunfo nature reserve. It is decaffeinated using the Mountain Water Decaf method, in which pure water from the Pico de Orizaba is used to gently remove the caffeine without the use of chemicals. This technique preserves the flavours and ensures that up to 99% of the caffeine is removed.
