T'xayalaj is the name of the farm that was purchased around fourteen years ago by Maria Perez Morales and her husband Diego to grow coffee there. Maria is mainly responsible for running the farm and receives support from her family, while her husband Diego works abroad. Interestingly, Maria's children have also developed a growing interest in growing coffee and caring for the land. They can well imagine taking over the farm when the time comes.
Over the years, Maria has learnt a lot about coffee farming and gained valuable experience. Her hard work has enabled her to produce high-quality speciality coffees for the third time. Although her farm is comparatively small - this year we purchased about half of the total harvest of 345kg - Maria's dedication and expertise shows how much potential there is in this small but impressive farm.

Fresh Service: This coffee is freshly roasted for you every Monday and shipped two days later.
We recommend that espresso roasts be used 12 days after the roast date or filter coffees 5 days after the roast date found on the package. Freshly roasted coffee needs this time until it is ready for a constant extraction.
We ask that the order is always sent before 23:59 on Sunday, so that we can ensure a shipment on the following Wednesday.
