The coffee is extremely sweet and well-balanced, with notes of stone fruit and caramel - for us an excellent morning coffee. After the coffee cherries have been harvested, they are pressed out of their outer shells using a machine called an Ecopulper.


The Ecopulper is an important tool for the coffee farmers because it allows them to control how much of the greasy layer surrounding the coffee beans is removed before fermentation.To ensure that the coffee beans dry evenly, the farmers move them frequently during the drying process. On the first day of drying, they lay the beans out in a thin layer and keep a constant eye on them. When the coffee becomes drier, usually on the third day, they lay it out in slightly thicker layers to slow down the drying process. Then move the coffee every hour until sunset to ensure it dries evenly. During the hottest hours of the day, they also cover the coffee so that it is not directly exposed to the sun. The entire drying process takes about 12-15 days. After the coffee has dried, it rests in plastic bags for two months before a special grinder removes the yellow parchment layer from the beans.

We recommend that espresso roasts be used 12 days after the roast date or filter coffees 5 days after the roast date found on the package. Freshly roasted coffee needs this time until it is ready for a constant extraction.
