Länggass tea Tarry Lapsang
Yan Xiao Zhong, "smoked tea", originally comes from Tongmuguan near Wuyishan and is now produced throughout Fujian province. The original Zheng Shan Xiao Zhong, "small variety really from the mountain", which has been known since 1851, was probably created by accident: An army passing through needed quarters, whereupon the tea piled up to oxidise was placed outside and came into contact with the smoke from the campfires. Even today, the Zheng Shan Xiao Zhong smoked over pinewood is still the best quality and is often produced as Gongfucha, i.e. sorted by leaf grade. Simpler, industrially produced (and usually very heavily smoked) teas are called Tarry Lapsang Souchoung. Depending on the base tea, Yan Xiao Zhong teas are soft, medium-bodied and simple to highly flavoured. There are also strong or subtle smoky notes.
