It must be Monday or Thursday. Coffee is roasted at Ferrari on these days. And has been since 1895.Renato Ferrari, 76, owner of Switzerland's oldest and last coffee roastery that still uses coal for heating, stands next to the glowing oven to check the roasting degree of the beans. Wild Coffee Collection No 02: 100% wild Arabica from the select 2017/18 forest harvest, single variety roasted in the Kaffa workshop. The Wild Coffee Collection is a limited and numbered edition of 480 bags. Wodiyo is home to many hidden places like the Dadiben hot spring, which pours into a small stream that meanders through the vast coffee forests. Some of the coffee collected here by 440 farmers from a forest area of 383ha was once reserved for prominent guests.In Wodiyo, a remote village in the north of the Kaffa Biosphere Reserve, the collected wild coffee cherries are dried naturally in the sun and, after hulling, sorted bean by bean by hand. For the Wild Coffee Collection, we select the best beans and roast them single-origin to create an intensely spicy coffee.
