The Mokaflor coffee roasting company has been operating in the heart of Florence since the 1950s and has been run by the Bernini family for several generations. This beautiful tradition allows for continuity in the roasting craft and the passing down of coffee knowledge through generations.
Mokaflor roasts with a drum roaster, in which the coffee is heated slowly and gradually, which allows its aroma to develop best. After the coffee beans are blended, the coffee goes into degassing silos where it rests and degasses for about 10 days. Before packaging, the blends are tested with a professional espresso machine.
