MAME Full Bloom, filter roast

Full Bloom is a typical Brazilian coffee with nutty notes - in the cup it unfolds wonderful notes of walnut. While searching for a suitable coffee for the 2018 Brewers Cup World Championships, MAME came across the Daterra farm in the Minas Gerais region of Brazil. Daterra produces high-quality coffee in a wide range of flavours. The Daterra farm is located at 1150 m above sea level.

MAME was founded in 2016 by Mathieu Theis and Emi Fukahori in Zurich. MAME means beans in Japanese. The reference to Japanese culture is symbolic of their dedication to the world of speciality coffee on the one hand, and their desire to always improve on the other. By participating in various barista competitions, Mathieu and Emi continue to develop. MAME runs two coffees in Zurich.

Since 2019, the duo has been roasting their own coffees. They choose their green coffee deliberately and purposefully, cultivating a roasting style that brings out the diversity of flavours in the coffee. They also focus on care, as they do in their two cafés, using flavour directions to guide their selection and serving products with character. MAME's espresso roasts are balanced with a pleasant mouthfeel. The filter roasts are stimulating and clear in the cup.

We recommend that espresso roasts be used 12 days after the roast date or filter coffees 5 days after the roast date found on the package. Freshly roasted coffee needs this time until it is ready for a constant extraction.

Val&tins Garden Isule Natural, Uganda

Single Origin Arabica coffee from Western Uganda. The Isule Natural has a fruity-sweet aroma with a strong body. With a medium roast, the fine nuances of flavour are preserved. The ripe cherries are picked by hand and dried in the sun, only then is their pulp removed. The sweet pectin layer, the so-called mucilage, which coats each coffee bean, can thus act on the bean for a long time and develop a pronounced sweetness. This coffee is perfect as a cappuccino. Isule is located in western Uganda at the foot of the Rwenzori Mountains on the border with the Democratic Republic of Congo. A small cooperative in the community of Isule in western Uganda produces an excellent, single-origin Arabica coffee.The Rwenzori Massif is a UNESCO World Heritage Site because of its high ecological importance. Even the Greek geographer Ptolemy reported on the legendary "Mountains of the Moon", where the Nile is said to have originated. Trees covered in dense lichen and primordial plants line the path to one of the most beautiful natural paradises in Central Africa. Despite its close proximity to the equator, the climate is pleasantly mild and the soil rich in nutrients. These ideal conditions favour the cultivation of high-quality Arabica coffee.The plantation is located at over 1'600m above sea level. On the steep slopes, the ripe coffee cherries are carefully picked by hand. Coffee is the only source of income for the community of Isule. Every additional franc the farmers receive per kilogram secures the income for the families and thus also the expensive school fees for the numerous children.In Western Uganda, coffee is often sold to middlemen below cost price and mixed with other low-quality varieties.
